Black Bean Brownies

Black beans are a wicked source of protein, but a lot of people only associate them with savoury meals, like bowls or salads. Well, thanks to some recipes I've recently come across, I see them in a new light.

These black bean brownies are as dense as the real thing without the added crap. Thanks to Indulge Without Bulge for this killer recipe - made with real ingredients that you cannot pronounce!

Benefits of Black Beans:

• Source of protein

• High fibre content (helps keep your stomach happy)

• Packed with micronutrients (potassium, folate, vitamin B6, etc.)

• Said to help lower cholesterol and aids in heart health

Ingredients:

1 ½ Cups of Black Beans (rinsed and drained)

2 Tbsp. of Cocoa Powder

½ Cup of Quick Oats

1 Tsp. of Salt

½ Cup of Maple Syrup

¼ Cup of Coconut Oil

2 Tsp. of Vanilla Extract

½ Tsp. of Baking Powder

½ Cup of Dark Chocolate Chips

Directions:

  • Preheat oven to 350°

  • Rinse and strain black beans

  • Combine all ingredients in a food processor

  • Stir in chocolate chips

  • Grease a 8x8 pan (coconut oil is a good option)

  • Pour ingredients into pan and bake for 15-18 minutes

  • Let cool for 10 minutes

Quick Tip: Maple syrup is a great alternative to sugar ... not only is it sweet, its packed with electrolytes and vitamins.
