Breakfast of Champions

If someone were to ask me what my last meal on earth would be, pancakes would most definitely make my list.

I LOVE pancakes, but we all know that a stack of IHOP pancakes probably doesn't fit in too well with my daily eating habits. Instead, I've found alternatives to satisfy my cravings without making me full sluggish or off-track.

I've posted about FlapJacked pancake mix several times on my Instagram before - I personally think this is one of the best pancake mixes on the market; simple ingredients, easy to make, and very filling. Also, they seem to be the perfect mixture of carbs, protein, and fat; a macro grand slam.

Although it would be nice to have a year-supply of FlapJacked, sometimes its not feasible, so here are a couple of my favourite protein pancake recipes!

Pancake Option #1

Ingredients

• 1 Cup of FlapJacked pancake mix in Apple Cinnamon

•  3/4 Cup of Water

Directions

• Mix together and let sit for 2 minutes for batter to thicken

• Cook on medium hit until you see bubbles forming, then flip

• Stack & enjoy!

Pancake Option #2

Ingredients

• 1/2 Cup Oatmeal

• 1/2 Cup Egg Whites

• 1/2 Cup Protein Powder

• Dash of Cinnamon & Vanilla Extract

Directions

• Add all ingredients to a blender and blend together (a Magic Bullet works great too)

• Cook on medium hit until you see bubbles forming, then flip

• Stack & enjoy!

Pancake Option #3

(This one is good for the 'bulkers' out there)

Ingredients

• 1 Cup Oats

• 6 Egg Whites

• 1 Cup of Plain Greek Yogurt

• 1 Tbsp of Honey

• Dash of Vanilla Extract

Directions

• Add all ingredients to a blender and blend together (a Magic Bullet works great too)

• Cook on medium hit until you see bubbles forming, then flip

• Stack & enjoy!

Pancake Option #4

Ingredients

• 1-2 Bananas (ripe ones work best)

• 2 Eggs

• 1/8 Tsp of Baking Powder

Directions

• Mash bananas in a bowl until smooth

• Add eggs and baking powder and combine all together

• Cook on medium hit until you see bubbles forming, then flip

• Stack & enjoy!

QUICK TIP (for all recipes): Coconut oil is a great option to cook with (packed with healthy fats) - not only because it has a high cooking point, but the coconut flavour blends very nicely with the cinnamon and vanilla flavours.
