Chickpea Cookie Dough

This is probably one of my favourite recipes for a couple reasons ... it satisfies my sweet tooth, its made with ingredients I know and can pronounce, and it has peanut butter in it ... need I say more?

This recipe was inspired by a couple different ones I've come across on social media, but I've played around with them a bit and came up with one that comes out just the way I like it.

Not only does this make a kick-ass dessert, but chickpeas are packed with protein and fibre - making it both filling and satisfying. Chickpeas are a great alternate source of protein for those who don't eat meat, and the fibre helps keep your digestive tract happy.

Not much to it, but I promise its worth it!

Ingredients:

1 Can of Chickpeas (aim for the low sodium ones)

1/2 Cup of All-Natural Peanut Butter

1/2 Cup of Pure Maple Syrup

1 Scoop of Vanilla Protein

Dash of Vanilla Extract

Dash of Almond Milk

1/4 of Dark Chocolate Chips

Directions:

• Drain and rinse chickpeas

• Add all ingredients into a food processor except for the chocolate chips, and BLEND

• Fold in chocolate chips

• Put in fridge for 1 hour or freezer for 30 minutes

• ENJOY!
