Homemade Energy Bars
I always challenge my athletes to read the ingredients of things they pick up at the grocery store. Granola bars and energy bars are one of those things that companies seem to sneak a lot of odd ingredients into ... if you can't pronounce, put it down.
Homemade energy bars are easy to throw together and store well in the fridge or freezer. I call them energy bars because they have some nutrient dense ingredients, but as athletes we need fuel for our training and daily activities!
These are great as a breakfast on-the-go or a quick snack during a busy day of training, adult-ing, and playing.
1 Cup of All-Natural Peanut Butter
1/2 Cup of Honey
1/2 Cup of Coconut Oil
2 Cups of Oats
1 Cup of Shredded Coconut
1/2 Cup of Chopped Nuts (almonds, walnuts)
1/2 Cup of Dark Chocolate Chips
1 Tsp. of Vanilla
1 Scoop of Protein Powder (optional)
• Melt the peanut butter, coconut oil and honey in a saucepan over medium-low heat.
• Remove from heat, add the rest of the ingredients, and stir completely.
• Pour into a pan that is lined with parchment paper or coconut oil.
• Let cool in fridge or freezer and enjoy!
Quick Tip: After you freeze the bars, put a knife under warm water to help cut through the bar a little easier. Individually wrap each piece and throw some in the freezer to eat at a later date.
